The raw cacao products are the basic ingredients that we use in all of our raw chocolate products. The raw cacao beans are the least processed form of cacao. They come from a heirloom variety of Criollo Amazonico Cacao grown by indigenous cooperatives in Satipo located in the Peruvian Amazon. The pods are just picked from the trees then split open the flesh and beans are scooped out and then fermented for a couple of days. The beans are then washed thoroughly to clean off the flesh etc. and then dried in dryers at <40 degrees C. Our nibs are made from beans, from the same area, that are winnowed to remove the skins. We get our powder and butter from Satipo in Peru where they use a hydraulic press to press the licor (made by grinding the nibs into a paste), creating a vastly superior quality product to conventional cacao powder and butter that is made from roasted beans.
